Everyone's favorite summer squash . . . Zucchini!

Zucchini is more than just a fun word to say! I think it's safe to say that zucchini is the world's most famous summer squash. It adds a wonderful texture and a nice subtle flavor to all kinds of dishes, but it's also very healthy for us. It's also kind of a cool squash because you can eat the whole thing from the seeds to the peel!

One cup of zucchini has only 36 calories, but that same serving gives you 10% of your daily recommended amount of dietary fiber along with some protein, L-tryptophan and omega-3 fatty acids.

Check out all the goodness that is packed into a typical zucchini:

Dietary Fiber. This helps us to remain-ahem-regular, keeps us fuller longer so we don't overeat and it also helps to lower cholesterol. A diet high in fiber can also help to prevent colon cancer by getting rid of those toxins that would rather settle into our bowels than be encouraged out by foods like zucchini!

Vitamins. Zucchini is high in vitamins A and C, as well as folate. These nutrients are antioxidants, which can help prevent several types of cancer. These nutrients also work with the copper found in zucchini to help fight inflammation in the body, deterring disorders like asthma and arthritis. Folate helps to break down a dangerous amino acid which can lead to heart attack and stroke.

Magnesium and Potassium.  Zucchini is high in magnesium which studies have shown reduces our risk of stroke and heart attack.  Potassium, along with its friend magnesium, helps to take some of the stress off of our circulatory systems, reducing blood pressure which can help prevent many serious medical conditions.

Who knew that such a yummy veggie could be so good for you?

Sauteed zucchini is a perfect accompaniment to any summer meal. It's delicious in soups, frittatas, salads and served with pasta. Enjoy it often!
