Apricot Chicken Breasts
Serves 6

6 boneless skinless chicken breast halves — pounded to 1/4-inch thickness
2 tablespoons butter — divided
1/4 cup apricot jam
2 green onions — sliced
1/4 teaspoon balsamic vinegar
2 teaspoons brown sugar

Place chicken breasts in a large, freezer zipper-topped bag and use a rolling pin to flatten to desired thickness. (It helps to have chicken partially frozen). In a skillet over medium high heat, melt one tablespoon of butter and brown chicken, about 2 minutes on each side.

Add remaining ingredients to skillet with remaining tablespoon of butter. Cover and simmer for 3-4 minutes or when chicken is fully cooked. Remove to dinner plates and serve with chopped parsley on top. Serve with steamed broccoli garnished with lemon zest.
