Substitutions for alcohol when cooking

For some alcoholics, just the smell of the substance they used to abuse or the smell of it, can cause a relapse and they need to stay as far away from it as possible.

Others choose to avoid alcoholic substances for religious reasons or due to pregnancy and health factors. We highly recommend staying away from the infamous "cooking wines" as they often do contain a minimal amount of alcohol in them and are overburdened by salt. So we need some substitutes!

Here is a list of substitutions that will work with our recipes calling for wine, beer or spirits:

Beer: equal parts chicken or vegetable broth and ginger ale with a splash of malt vinegar.

White Wine: equal parts chicken or vegetable broth and white grape juice with a splash of cider or balsamic vinegar.

Red Wine: equal parts chicken or vegetable broth and red grape juice with a splash of red wine or balsamic vinegar.

Sherry: same as either wine substitute.

Spirits, such a vodka, scotch, whiskey, etc. (I won't give you recipes with anything like this, but here's the substitute) chicken broth or vegetable broth. If the whole flavor of the recipe is central to the spirit being used, I would skip the recipe. Otherwise, this simple substitute will work.
